1. Warm water - 2 tablespoons
2. Saffron threads, or more to taste - 5
3. Couscous - 1 cup
4. Vegetable broth - 1 cup
5. Celery stalk, diced - 1
6. Dried currants - ¼ cup
7. Extra-virgin olive oil - 2 tablespoons
8. Lemon juice - 1 tablespoon
9. Harissa, or to taste - 1 teaspoon
10. Ground cumin - ½ teaspoon
11. Sea salt to taste - ½ teaspoon

How to cook deliciously - Saffron Couscous

1. Stage

Combine warm water and saffron together in a bowl.

2. Stage

Mix couscous and vegetable broth together in a saucepan; bring to a boil. Remove saucepan from heat, cover saucepan, and let sit for 5 minutes. Fluff couscous with a fork and transfer to a bowl.

3. Stage

Stir saffron mixture, celery, currants, olive oil, lemon juice, harissa, cumin, and sea salt into couscous. Refrigerate until chilled, at least 30 minutes.
