1. 3 1/2 c. chicken stock -
2. 1 small onion -
3. 1 stalk celery -
4. 1/4 c. uncooked brown rice -
5. 1/2 lb. medium shrimp -
6. 1 tbsp. grated lime zest -
7. Juice of 1 lime -
8. tsp. crushed red pepper flakes -
9. Salt and pepper to taste -

How to cook deliciously - Shrimp-Rice Soup

1. Stage

Combine the stock, onion, celery, and rice in a 6-quart pot. Cover and bring to a boil. Reduce the heat and simmer until the rice is tender, about 40 minutes.

2. Stage

Stir in the shrimp and simmer until they are pink and cooked through, about 5 minutes. Stir in the lime zest, lime juice, and pepper flakes. Taste and season with salt and black pepper if needed.
