1. Sweet Italian sausage, casings removed 1 pound
2. Lean ground beef 1 pound
3. Olive oil ¼ cup
4. Onion, diced 1 large
5. Sliced mushrooms 12 ounces
6. Carrots, shredded 2
7. Green bell pepper, diced 1
8. Red bell pepper, diced 1
9. Zucchini, quartered lengthwise, then sliced 1
10. Frozen chopped spinach, thawed and drained 1 (10 ounce) package
11. Fresh basil, julienned 4 ounces
12. Garlic, crushed 4 cloves
13. Chopped fresh thyme 1 tablespoon
14. Fresh oregano 1 tablespoon
15. White sugar 1 tablespoon
16. Salt and pepper to taste 1 tablespoon
17. Peeled and diced tomatoes 3 (28 ounce) cans

1 . Stage

Cook sausage and ground beef in a medium skillet over medium heat until browned and crumbly, 7 to 10 minutes. Drain.

2 . Stage

Heat oil in a large stockpot or Dutch oven over medium heat. Add onion and cook until translucent, about 5 minutes. Stir in mushrooms, carrots, bell peppers, and zucchini; cook until just tender, 3 to 5 minutes.

3 . Stage

Add sausage and beef mixture to the pot, then stir in spinach, basil, garlic, thyme, oregano, sugar, salt, and pepper. Cook for 2 to 5 minutes, then pour in tomatoes and stir well. Reduce the heat, cover, and simmer, stirring occasionally, for 3 hours.
