Ingredients for - Smoked Sausage and Tortellini Soup

1. Olive oil - 1 tablespoon
2. Onion, 1/2-inch dice - 1 medium
3. Garlic, minced - 1 clove
4. Tomato paste - 1 tablespoon
5. Hillshire Farm® Smoked Sausage, cut into 1/4-inch slices - 1 (14 ounce) package
6. Diced tomatoes - 1 (28 ounce) can
7. Chicken broth - 4 cups
8. Fresh cheese tortellini - 1 (9 ounce) package
9. Salt - 1 teaspoon
10. Pepper - ¼ teaspoon
11. Baby spinach - 2 cups
12. Parmesan cheese - 1 tablespoon

How to cook deliciously - Smoked Sausage and Tortellini Soup

1. Stage

Heat oil in a large pot over medium heat. Saute onion and garlic in oil until soft, about 5 minutes. Stir in the tomato paste and smoked sausage and cook for an additional 3 to 4 minutes.

2. Stage

Add the diced tomatoes, broth, tortellini, salt and pepper and bring to a boil. Reduce heat and simmer gently for 5 minutes, then stir in spinach and cook for an additional 3 to 4 minutes. Serve with a sprinkle of Parmesan cheese, if desired.
