Ingredients for - Spicy Barbados Pepper Sauce

1. Chopped red onion 1
2. Chopped red bell pepper 1 cup
3. Scotch bonnet chile peppers, chopped 3
4. Papaya - peeled, seeded and cubed 1 large
5. Garlic, peeled 1 head
6. Dry mustard powder 2 tablespoons
7. White sugar 2 cups
8. Dry white wine 3 cups
9. Malt vinegar 1 cup
10. Water 1 cup
11. Lemon juice ½ cup
12. Prepared yellow mustard 2 cups

How to cook deliciously - Spicy Barbados Pepper Sauce

1 . Stage

Place the onion, red pepper, Scotch bonnet chiles, papaya, and garlic in a food processor. Pulse until finely chopped. Scrape into a large pot, and stir in the mustard powder, sugar, wine, vinegar, water, and lemon juice.

2 . Stage

Bring to a simmer, then reduce heat to medium-low, and continue simmering, stirring frequently until the mixture has thickened, about 1 hour. Once thick, remove from the heat, and stir in the yellow mustard.
