How to cook deliciously - Taco Meat Loaves
1. Stage
Preheat the oven to 350°F, and have two ungreased 9x5-inch loaf pans ready to go. In a large bowl, stir together the eggs, 1/2 cup of the picante sauce, beans, corn, onions, olives, bread crumbs, taco seasoning, cumin and chili powder. Crumble the ground beef into the mixture. Mix it all gently just until everything comes together.
2. Stage
Press the meat mixture evenly into the two loaf pans. Pop the pans into the oven. Bake until a thermometer inserted into the thickest part of each loaf reads 160°, 50 to 55 minutes.
3. Stage
Spoon the remaining picante sauce over the tops of the loaves. Then, sprinkle 1 cup cheese onto each loaf. Put the pans back in the oven, and bake for 10 to 15 minutes, until the cheese is nice and melty. Pull the loaves from the oven, and let them rest for 10 minutes. Slice and serve.
