Ingredients for - Tacos al Pastor in the Slow Cooker

1. Boneless pork loin, or to taste - ½ (3 pound)
2. Salt and ground black pepper to taste - ½ (3 pound)
3. Crushed pineapple, divided - 1 (15 ounce) can
4. Chicken broth - 1 (14.5 ounce) can
5. Orange juice - 1 cup
6. Red onion, quartered - 1 small
7. White vinegar - ¼ cup
8. Lime juice - 2 tablespoons
9. Chipotle pepper in adobo sauce - 1
10. Minced garlic - 3 teaspoons
11. Chili powder - 2 teaspoons
12. Salt - 1 ½ teaspoons
13. Ground cumin - 1 ½ teaspoons
14. Garlic salt - 1 teaspoon
15. Ground black pepper - 1 teaspoon
16. Onion Powder - 1 teaspoon
17. Dried oregano - 1 teaspoon
18. Frozen corn - 1 (10 ounce) package

How to cook deliciously - Tacos al Pastor in the Slow Cooker

1. Stage

Season pork loin with salt and pepper and place in a slow cooker.

2. Stage

Puree 1/2 of the pineapple with chicken broth, orange juice, red onion, vinegar, lime juice, chipotle pepper, 1 teaspoon adobo sauce, garlic, chili powder, salt, cumin, garlic salt, 1 teaspoon black pepper, onion powder, and oregano. Pour over the pork. Add remaining pineapple and frozen corn.

Cook on Low for 8 hours. Shred pork and warm for an additional hour.
