1. Stage
To make the broth, we will need a chicken carcass or backs, like mine. You can add a couple more chicken wings. In a small bowl mix salt, sugar and pepper. We rub this mixture all over the chicken. Then rub it with flour. Put it in a baking dish.

Wash the onion with the husk, cut it in half and put it in the mold with the chicken.

Seal the mold with foil and place in a preheated oven for 15 minutes.

While the chicken backs are baking, peel the carrots and cut them into circles. Or in half-circles if the carrots are large.

Fry the carrots in a DARK (!!!) pan until they change color.

Here our backs are ready. They exude a stupefying aroma in the vicinity of onions!

We send the cooked backs and onions to the pot, along with the carrots. And fill the whole set with COLD water. We put on the fire and boil for 1 hour. At the end of cooking throw the bay leaf, try the salt. If there is not enough salt, add it to your taste. When serving broth add finely chopped dill and parsley. That's it!
