2. 1 cup chopped cucumber, peeled (and seeded if the seeds are bitter) -
3. 1/3 cup crumbled feta cheese -
4. 1 tablespoon mint leaves, thinly sliced -
5. 1 teaspoon fresh oregano, chopped -
6. 1 tablespoon lemon juice -
7. 2 tablespoons shallots or green onions, finely chopped -
8. 2 teaspoons extra virgin olive oil -
9. Coarse salt and freshly ground black pepper to taste -
