1. Cubed, cooked chicken 2 cups
2. Chopped celery 1 cup
3. Mayonnaise 1 cup
4. Curry powder, or more to taste ½ teaspoon
5. Pineapple chunks, drained 1 (20 ounce) can
6. Mandarin oranges, drained 1 (11 ounce) can
7. Firm bananas. sliced 2 large
8. Sweetened flaked coconut ½ cup
9. Salted peanuts ¾ cup

1 . Stage

Place chicken and celery into a large bowl. Combine mayonnaise and curry powder in another bowl; add to chicken mixture and mix well. Cover and chill for at least 30 minutes.

2 . Stage

Add pineapple, oranges, bananas, and coconut before serving; toss gently. Sprinkle with peanuts.
