Ingredients for - Turkey Stir-Fry

1. 1-1/2 pounds boneless turkey breast halves, cut into strips -
2. 1 tablespoon canola oil -
3. 1 small onion, chopped -
4. 1 carrot, julienned -
5. 1/2 medium green pepper, sliced -
6. 2 cups fresh mushrooms, sliced -
7. 1 cup chicken broth -
8. 3 tablespoons cornstarch -
9. 3 tablespoons reduced-sodium soy sauce -
10. 1/2 teaspoon ground ginger -
11. 2 cups pea pods, trimmed -
12. Cooked rice, optional -
13. 1/3 cup cashews, optional -

How to cook deliciously - Turkey Stir-Fry

1. Stage

In a large skillet or wok, stir-fry the turkey strips in canola oil over a medium-high heat for five to six minutes until the meat is no longer pink. Remove the turkey and keep it warm. In the same skillet, stir-fry the onion, carrot, green pepper and mushrooms for five minutes until they are crisp-tender but not limp.

2. Stage

In a small bowl, combine the chicken broth, cornstarch, soy sauce and ginger. Add to the skillet and cook, stirring continuously, until the sauce is thickened and bubbly.

3. Stage

Return the turkey to the skillet with the pea pods. Cook and stir until everything is heated through. Serve with rice and top with cashews if desired. Editor’s Tip: Don’t overcook the turkey when you return it to the skillet or it will turn tough. You really just want to heat it through again in the sauce.
