How to cook deliciously - Waffle sandwiches with date paste
1. Stage
Mix sifted wheat flour, baking soda and sugar.

Cut the cold butter into small pieces.

Add the butter to the flour and chop all together with a knife into crumbs.

Mix with a fork the chicken egg, soy sauce (I use a sauce with less salt) and apple cider vinegar.

Add the egg mixture to the flour mixture and knead into a smooth, non-sticky dough. If the dough is crumbly, add a little milk, if it is sticky, add a little more flour. Cover with a towel and leave to rest.

While the dough is resting, remove the pips from the dates (the weight is given with the pips) and pass through a meat grinder. Add the vanilla and citric acid and mix thoroughly. Instead of citric acid you can use a lemon (1), remove the pips, cut into slices and grind together with the dates.

Roll out the dough as a flapjack or a rectangle (your preference), put a thin layer of filling on one half without gaps, half a centimeter from the edges, cover the other half, pinch the edges and, pressing lightly, roll with a rolling pin to release the air and make it thinner. The envelope should be about 6x12 cm and height of mm. 4.

Bake in the preheated waffle iron. During baking the waffle will bake unevenly, the waffle will look like a half-opened book, so in the middle of the process the waffle will need to be turned from itself and continue the baking process.
