5. Grated zucchini - 2 cups
6. Unbleached all-purpose flour - 1 ½ cups
7. White whole-wheat flour - 1 ½ cups
8. Baking soda - 1 teaspoon
9. Baking powder - ½ teaspoon
10. Salt - ¾ teaspoon
11. Ground cinnamon - 1 tablespoon

1. Stage

Preheat oven to 350 degrees F (175 degrees C).

Grease and flour 2 4x8-inch loaf pans.

Beat eggs, sugar, canola oil, vanilla extract, and zucchini together in a large bowl until well combined.
