Ingredients for - African Peanut Soup

1. Olive oil - 2 tablespoons
2. Onions, chopped - 2 medium
3. Red bell peppers, chopped - 2 large
4. Garlic, minced - 4 cloves
5. Vegetable broth or stock - 8 cups
6. Crushed tomatoes, with liquid - 1 (28 ounce) can
7. Freshly ground black pepper - ¼ teaspoon
8. Chili powder (Optional) - ¼ teaspoon
9. Extra crunchy peanut butter - ⅔ cup
10. Uncooked brown rice - ½ cup

How to cook deliciously - African Peanut Soup

1. Stage

Heat oil in a large stock pot over medium-high heat. Add onions and bell peppers; cook and stir until tender. Stir in garlic and cook until fragrant, about 1 minute. Stir in vegetable stock, tomatoes, pepper, and chili powder. Reduce heat to low and simmer, uncovered, for 30 minutes.

2. Stage

Stir in rice; cover and simmer until rice is tender, about 15 minutes. Stir in peanut butter until well blended; serve.
