1. Tuna in water, drained - 1 (5 ounce) can
2. Dried cranberries - ⅓ cup
3. Sweet apple, cut into 1/4-inch pieces - ½
4. Light mayonnaise - 2 tablespoons
5. Green onion, chopped - 1
6. Sea salt to taste - 1
7. Ground black pepper to taste - 1
8. Chopped fresh spinach - 4 cups

1. Stage

Mix tuna, cranberries, apple, mayonnaise, green onion, sea salt, and black pepper together in a bowl; refrigerate 1 hour.

2. Stage

Put 2 cups spinach on each of 2 plates. Top spinach with about half the tuna salad.
