How to cook deliciously - Apple Basket Cake
1. Stage
The number of ingredients is calculated for a 18 cm mold. Sift flour, baking soda, cocoa, salt, and sugar into a separate bowl. In the bowl of a mixer, mix all the liquid (eggs, milk, butter, melted butter and vinegar. Then we add the dry ingredients to the liquid ones and the dough is ready.
2. Stage
Bake for 60 minutes at 170 degrees. Let cool, wrap in clingfilm and let stand for a few hours.
3. Stage
Melt the chocolate and butter in a water bath or microwave and mix thoroughly. Mix the cottage cheese with the milk or beat with a blender.
4. Stage
Separate the yolks from the whites. Combine the yolks, chocolate and butter and cottage cheese mixture until smooth. (Better with a blender)

Whip the whites to stiff peaks. I inverted the measuring cup with the whipped egg whites in the photo.

Gently mix the whites into the main mass, trying to keep the mass airy. Add the nuts.

Bake at 170 degrees for about 30 minutes. The dough should come out dry at the edge and slightly moist in the center. Let cool and leave to mature in foil.

Soak the prunes in a glass of hot water with rum and sugar. Allow to swell. Drain the water, bring to the boil, cool, and you can use it to soak the biscuits.

Prepare the cream. In the hot milk add butter and broken chocolate, stir well and add the cottage cheese. We beat it with an immersion blender. At first the cream is a bit thin, but when it cools it gets thicker and thicker. Please note that the amount of cream is calculated for the layer between the cakes without external smoothing.

Cut the biscuits into layers, remove the top crust. I had 3 layers of biscuit1 and 2 layers of biscuit2. I soaked the layers with a little water and rum in which the prunes were steeped. Let's proceed to assemble the cake. I alternated: biscuit1 - prune cream (a little cut) - biscuit2 - cream biscuit1 - cream prunes - biscuit2 - cream biscuit1.

It doesn't look good yet... but it can be fixed.

The cake itself is ready. And you can decorate it however you want. I decorated it with caramel apples and Swiss buttercream, the recipes for which I am indebted to this site. Do not judge, I am just learning.
