Ingredients for - Apricot Lentil Soup

1. Dried apricots - ⅓ cup
2. Onion, chopped - 1
3. Garlic, minced - 2 cloves
4. Olive oil - 3 tablespoons
5. Chicken stock - 5 cups
6. Red lentils - 1 ½ cups
7. Roma (plum) tomatoes - peeled, seeded, and chopped - 3
8. Ground cumin - ½ teaspoon
9. Dried thyme - ½ teaspoon
10. Salt and ground black pepper to taste - ½ teaspoon
11. Fresh lemon juice - 2 tablespoons

How to cook deliciously - Apricot Lentil Soup

1. Stage

Sauté apricots, onion, and garlic in olive oil, about 5 minutes. Add chicken stock and lentils and bring to a boil. Reduce the heat and simmer for 30 minutes.

2. Stage

Stir in tomatoes and season with cumin, thyme, salt, and pepper to taste. Simmer for 10 minutes.

3. Stage

Stir in lemon juice. Purée 1/2 of the soup in a blender, then return to the pot. Serve.
