Ingredients for - Apricot Lentil Soup

1. Dried apricots ⅓ cup
2. Onion, chopped 1
3. Garlic, minced 2 cloves
4. Olive oil 3 tablespoons
5. Chicken stock 5 cups
6. Red lentils 1 ½ cups
7. Roma (plum) tomatoes - peeled, seeded, and chopped 3
8. Ground cumin ½ teaspoon
9. Dried thyme ½ teaspoon
10. Salt and ground black pepper to taste ½ teaspoon
11. Fresh lemon juice 2 tablespoons

How to cook deliciously - Apricot Lentil Soup

1 . Stage

Sauté apricots, onion, and garlic in olive oil, about 5 minutes. Add chicken stock and lentils and bring to a boil. Reduce the heat and simmer for 30 minutes.

2 . Stage

Stir in tomatoes and season with cumin, thyme, salt, and pepper to taste. Simmer for 10 minutes.

3 . Stage

Stir in lemon juice. Purée 1/2 of the soup in a blender, then return to the pot. Serve.
