1. Unpeeled potatoes, cut into 1-inch chunks - 1 ½ pounds
2. Olive oil - 2 tablespoons
3. Kosher salt - 1 teaspoon
4. Black pepper - ¼ teaspoon
5. Grated Parmesan cheese - ½ cup
6. Dried thyme leaves - ¼ teaspoon

Preheat an oven to 400 degrees F (200 degrees C).

Place potatoes into a mixing bowl and drizzle with olive oil. Sprinkle with kosher salt, black pepper, Parmesan cheese, and thyme leaves. Toss to evenly coat, and transfer to a 9x13-inch baking dish.
