Ingredients for - Authentic New Orleans Red Beans and Rice

1. Shortening, or as needed - 1 tablespoon
2. White onion, chopped - 1
3. Green bell pepper, chopped - 1
4. Garlic, chopped - 3 cloves
5. Water - 8 cups
6. Dried red beans - 1 pound
7. Smoked ham hock - 1
8. Smoked sausage, cut into bite-sized pieces - 1 pound
9. Celery, chopped - 2 stalks
10. Bay leaves - 2
11. Creole seasoning (such as Tony Chachere's®) - 1 tablespoon
12. Dried thyme - ½ teaspoon
13. Dried sage - ½ teaspoon
14. Hot pepper sauce (such as Tabasco®), or to taste (Optional) - 1 dash
15. Cooked white rice - 3 cups

How to cook deliciously - Authentic New Orleans Red Beans and Rice

1. Stage

Melt shortening in a skillet over medium heat. Cook and stir onion, bell pepper, and garlic in hot shortening until tender, 5 to 7 minutes.

2. Stage

Combine water, red beans, and ham hock in a large pot; bring to a boil. Stir onion mixture into the pot; add smoked sausage and celery. Return to a boil. Stir bay leaves, Creole seasoning, thyme, and sage into boiling water. Reduce heat to low, cover the pot, and simmer until beans are tender, about 5 hours.

3. Stage

Remove and discard ham hock and bay leaves; stir in hot pepper sauce and serve over white rice.
