Finely chop the onion.

Cut the carrots into slices. I had them prepared the day before and frozen, so you can see the frost in the photo. I did not take them out beforehand and defrost them.

Heat vegetable oil in a cauldron, lightly fry the onion. After 5 minutes add carrots. Close the lid.

Slice the meat like a goulash. Add to the onions and carrots. Cook for a few minutes with the lid open, stirring occasionally so that each piece is cooked on all sides.

Rinse the quince well, getting rid of the gunk. Cut into cubes.

Pour the quince in the cauldron. Salt and add spices: black pepper, caraway seeds and anise, just a little at a time. Close the lid tightly. Wait until it boils and turn down the heat. Braise for an hour and a half.
