For the sauce, finely chop half an onion, half a carrot and 3 stalks of celery. Fry the vegetables in vegetable oil, add dry white wine at the end. No wine? Then we add water. We turn off the fire and add chopped garlic, ginger and a bit of hot red pepper. Using a blender, chop everything up.
