1 . Stage
Mix the eggs with the sugar and salt. If desired, you can add vanilla sugar. No special fanaticism is required, the mass just needs to be well mixed.

Add the cottage cheese to the egg and sugar mixture. If desired, you can rub it through a sieve. I do not do this. Here it is convenient to use a fork. The cottage cheese should be kneaded by mixing it in the egg mixture. There is no need to be frightened, this is done very quickly - honestly, it takes longer to write.

Stir the mass until homogeneous.

Pour in the flour. The dough will be sticky - it should be.

Pour a handful of flour on the table (about half a cup), distribute it. The flour should cover the work surface in a fairly thick layer. On top of the flour layer, spread out some of the cottage cheese dough (I divide the dough into three portions by eye - that's enough for three pans. For each new batch on the table, you will probably need to add a little flour).

Sprinkle the dough on top with flour, roll well on all sides (do NOT mix the flour!) Form a "sausage".

Use a sharp knife to cut the "sausage" into "pucks" 1.5 - 2 cm thick. Each "puck" is rolled on both sides in flour, simultaneously flattening a little with a knife or the palm of your hand and aligning the shape.

I try to make as many billets as I can fit in the pan. Such preparations can be frozen. To do this, you need to line a board with food film, lay the workpieces on it in one layer, and cover it with the film. In this form put in the freezer for a couple of hours. When the workpieces are frozen, remove them from the board and place them in a bag or container. Further roast without defrosting.

Pour vegetable oil (half and half with butter) into a frying pan and heat well. The fire is a little stronger than medium, on my stove it is regulator position 7 out of 12. We do not put the cheesecakes close to each other and we fry them WITHOUT the COVER for about 3 minutes, until the bottom is browned. Of course, you have to watch your stove and make sure that the cheesecakes won't burn. Maybe in your case it will take a little longer or a little less time to brown. Flip the cheesecakes, now cover the pan with a lid and turn down the heat (4-5 of 12). Cook the cheesecakes until cooked, about 5 minutes. They will rise and look puffy in the pan, but will settle as they cool - this is normal. If you're frying frozen baked goods, the cooking time will naturally increase.
