5. Lime juice - 2 tablespoons
6. Asian fish sauce - 2 tablespoons
7. Ground ginger - 1 teaspoon
8. White sugar - 2 teaspoons
9. Hot red pepper flakes - ½ teaspoon
10. Minced fresh cilantro leaves - 2 tablespoons
11. Chopped fresh mint leaves - 2 tablespoons
12. Boston lettuce - 2 tablespoons
13. Sliced cucumbers - 2 tablespoons
14. Grated carrots - 2 tablespoons
15. Chopped honey-roasted peanuts - 2 tablespoons

1. Stage

In a medium bowl, mix chicken, celery, green onions and peanuts. In a small bowl, whisk lime juice, fish sauce, ginger, sugar, red pepper, cilantro and mint, plus 2 Tbs. water.
