1. Vegetable oil for browning - 2 tablespoons
2. Beef chuck, cut into 1 1/2-inch cubes - 5 pounds
3. Flour for dredging - 5 pounds
4. Whole peeled tomatoes, mashed - 2 (28 ounce) cans
5. Diced green chilies - 2 (7 ounce) cans
6. Serrano chiles, finely chopped - 12
7. Yellow onions, finely chopped - 2 small
8. Beer - 12 fluid ounces
9. Water - 20 fluid ounces
10. Cumin - 2 tablespoons
11. Cilantro, chopped - 1 bunch
12. Salt and pepper to taste - 1 bunch

How to cook deliciously - Chile Colorado II

1. Stage

Heat oil in a heavy bottomed pan over medium high heat. Dredge beef cubes in flour. Cook in hot oil until browned on all sides, reducing heat if necessary. Add tomatoes, green chilies, serrano chiles, onions, beer, water, cumin, salt, and pepper. Cover and simmer for 2 hours. Add chopped cilantro, and simmer 1 hour longer.
