How to cook deliciously - Christmas cake with an apple-cheese filling
1. Stage
Mash the yolks with sugar.
2. Stage
We add butter, sour cream, baking soda (extinguished with lemon juice), flour, and knead the dough. The dough is very naughty to work with, but then it turns out very tasty, so you have to endure the inconvenience for the sake of the great goal!
3. Stage
Put the dough in the refrigerator for the time it takes to prepare the filling.
4. Stage
Now we can proceed with the filling. Mix the cottage cheese (better to use a paste, but if you don't have one, you'll have to work with an immersion blender), sugar, sour cream, egg yolk and vanilla.
5. Stage
Add the starch and mix thoroughly. The original recipe does not specify what kind of starch should be used, so I conclude that you can use any starch. I have corn starch.
6. Stage
Cut the apples into slices. Of course, we first remove the core and, if possible, peel it. If you take sour apples - they will hold their shape better after baking, the sweeter varieties (they are more loose) - may fall apart a little, but it's not terrible, it will not go anywhere.
7. Stage
Take the dough out of the fridge and place it in a mold (preferably a molded one), forming high (as much as possible) sides. The size of the mold in the photo is 26 cm.
8. Stage
Place the curd layer on the base first.
9. Stage
Then the apple one. We put it in the oven at 180 degrees.
10. Stage
While the pie is in the oven, beat the cold whites with a pinch of salt, gradually adding the sugar, and finally adding a few drops of lemon juice. Once the apples begin to darken slightly around the edges, take the pie out and cover with a layer of meringue. You can do this in 2-3 steps, drying each meringue layer, or you can spread it all at once. It will take exactly as long in the oven as it takes for the meringue to be ready (the pie itself will set quickly).
11. Stage
If you make one protein layer and thinner (don't use all the whites), the apples will come through - it looks very pretty.
12. Stage
And if you use all the whites, you get a nice and tasty meringue "cap."
