Ingredients for - Cilantro and Garlic Potatoes

1. Oil for frying, or as needed 1 quart
2. Potatoes, cubed 4 large
3. Vegetable oil 1 teaspoon
4. Chopped fresh cilantro 2 cups
5. Garlic, minced 4 cloves
6. Fresh lemon juice 1 tablespoon
7. Cumin ½ teaspoon
8. Salt to taste ½ teaspoon

1 . Stage

Heat 1 quart oil in a deep fryer to 375 degrees F (190 degrees C).

2 . Stage

Fry potatoes in hot oil until golden brown, about 8 minutes. Drain on paper towels.

Meanwhile, heat 1 teaspoon oil in a large skillet over medium heat. Add cilantro and garlic; cook and stir for about 5 minutes. Add drained potatoes, lemon juice, cumin, and salt; stir until well combined.
