1. Olive oil - ¼ cup
2. Rice wine vinegar - ¼ cup
3. Maple syrup - 1 tablespoon
4. Toasted sesame oil - 1 tablespoon
5. Liquid aminos (such as Bragg) - 1 ½ teaspoons
6. Freshly squeezed lemon juice - 1 teaspoon
7. Garlic, minced - 1 clove
8. Red pepper flakes - ¼ teaspoon
9. Salt and ground black pepper to taste - ¼ teaspoon
10. Cooked quinoa - 1 ½ cups
11. Shelled edamame - 1 cup
12. Chopped red bell pepper - ½ cup
13. Chopped Persian cucumber - ½ cup
14. Shredded carrot - ½ cup
15. Sliced green onion - ½ cup
16. Dried cranberries - ½ cup
17. Slivered almonds - ¼ cup

How to cook deliciously - Easy Quinoa and Edamame Salad

1. Stage

Make the dressing: Combine oil, vinegar, maple syrup, sesame oil, liquid aminos, lemon juice, garlic, red pepper flakes, salt, and pepper in a mason jar. Seal the lid and shake until fully blended.

2. Stage

Make the salad: Combine cooked quinoa, edamame, bell pepper, cucumber, carrot, green onion, and cranberries in a large mixing bowl. Add 1/2 cup of the dressing and mix until well combined; save any remaining dressing for another use. Place in the refrigerator until chilled, at least 1 hour.

Garnished with slivered almonds to serve.
