Now we fry our eggplant on both sides in oil, fold it on a napkin and spread our bean paste on it, immediately roll it up into a tube and put it on a plate. It is better to peel the eggplant, I made the first one not peeled, but I peeled the next one already, and it was more convenient to curl it with a tube.
