Ingredients for - Greek Salad on Roasted Garlic French Bread

1. Idahoan® Roasted Garlic Flavored Mashed Potatoes - 1 (4 ounce) package
2. Butter, softened - 1 pound
3. French bread - 1 loaf
4. Cherry tomatoes, cut in half - ½ pint
5. Cucumber, peeled and sliced into 1/4-inch thickness and cut into quarters - 1 cup
6. Red onion, chopped into thin slices and soaked 10 minutes in small bowl of ice water to reduce sharpness - 1 medium
7. Green pepper, coarse chopped - 1 small
8. Kalamata olives, pitted and sliced - ¾ cup
9. Olive oil - 6 tablespoons
10. Fresh lemon juice - 1 ½ tablespoons
11. Red wine vinegar - 1 tablespoon
12. Garlic cloves, minced - 2
13. Crumbled feta cheese, for topping - ¾ cup
14. Plain Greek yogurt - 2 cups
15. Cucumber, small dice - 1 cup
16. Fresh lemon juice - 2 tablespoons
17. Garlic cloves, minced - 2
18. Finely chopped fresh dill - 2 tablespoons
19. Salt and pepper, to taste - 1 pinch

How to cook deliciously - Greek Salad on Roasted Garlic French Bread

1. Stage

Mix the dry package of Idahoan Roasted Garlic Potatoes with the butter until blended. Slice the French bread length wise and generously spread with the roasted garlic mixture. Toast under the broiler until butter spread is melted and toasted on top. (You can also grill the Garlic Bread--see footnote.)

2. Stage

Greek Salad: Drain onion from ice water and pat dry with paper towels. In a large bowl combine all salad ingredients, except cheese. Top the French bread with the Greek salad and sprinkle cheese over top. Serve with Tzatziki sauce.

Tzatziki Sauce: In a medium bowl, combine Greek yogurt, cucumber, lemon juice, garlic, and dill. Stir until well combined. Taste and season with salt and pepper.
