2. Onion, chopped 1 large
3. Celery, sliced 5 stalks
4. Carrots, sliced 4
5. Peeled, cubed white potatoes 4 cups
6. Minced clams, with juice 2 (16 ounce) cans
7. Clam juice 3 quarts
8. Dried thyme 1 teaspoon
9. Ground black pepper ½ teaspoon
10. Crisp cooked bacon, crumbled 8 slices

1 . Stage

In a large pot over medium heat, cook onion, celery and carrots in oil until they begin to soften. Stir in potatoes, clams, clam juice, thyme, pepper and bacon. Bring to a boil, then reduce heat and simmer 20 minutes, or until potatoes are tender.
