2. All-purpose flour - ¼ cup
3. Salt - ½ teaspoon
4. Ground black pepper - ½ teaspoon
5. Garlic, minced - 4 cloves
6. Bay leaf - 1
7. Paprika - 1 teaspoon
8. Worcestershire sauce - 1 teaspoon
9. Onion, chopped - 1
10. Reduced-sodium beef broth - 1 ½ cups
11. Potatoes, diced - 3
12. Carrots, sliced - 4
13. Celery, chopped - 1 stalk
14. Butternut squash, peeled and cut into small chunks - ¾ pound
15. Escarole, washed and torn into bite-sized pieces - ½ head

1. Stage

Place beef in slow cooker. Mix together flour, salt, and pepper in a small bowl. Pour over meat and stir to coat. Stir in garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, celery, and butternut squash.

2. Stage

Cover and cook on Low for 10 to 12 hours or on High for 4 to 6 hours. Stir in escarole. Cover and cook until escarole is tender, 15 to 20 minutes.
