1. Stage
To prepare this wonderful dish, we wash the herring carcasses. Then we open the abdomen, remove the insides and gills. Once again wash the fish under running water inside and outside and dry well.

Peel the garlic. Cut one clove into thin petals and set them aside.

In a mortar put a second clove of garlic, peppercorns and a large pinch of salt. Grind it all up.
