1. Irish bacon, diced - ½ pound
2. Potatoes, peeled and cubed - 2 large
3. Diced tomatoes with juice - 1 (15 ounce) can
4. Chicken stock, or as needed - 1 cup
5. Salt and black pepper to taste - 1 cup
6. Thinly sliced dark green Savoy cabbage leaves - 2 cups

1. Stage

Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
