1. Olive oil, divided - 2 tablespoons
2. Diced onion - 2 cups
3. Cooked, finely chopped chicken meat - 3 cups
4. Seasoned dry bread crumbs - 1 ½ cups
5. Eggs, lightly beaten - 2 large
6. Egg, lightly beaten (Optional) - 1 large
7. Chopped fresh parsley - 1 tablespoon
8. Salt - 1 teaspoon
9. Ground black pepper - ½ teaspoon

How to cook deliciously - Leftover Chicken Croquettes

1. Stage

Heat 1 tablespoon oil in a large skillet over medium heat. Add onion and sauté until translucent, about 5 minutes. Remove from the heat.

2. Stage

Combine chicken, bread crumbs, and two eggs in a large bowl; stir in onion until well combined. If mixture is too dry to form patties, mix in remaining egg. Mix in parsley, salt, and pepper. Form into small patties.

3. Stage

Wipe out the skillet; add remaining 1 tablespoon oil and heat over medium heat. Working in batches, fry patties until golden brown and crispy, 4 to 6 minutes per side.
