Ingredients for - Mashed Potato Cakes

1. 1 medium onion, chopped -
2. 2 tablespoons butter -
3. 2 large eggs, divided use -
4. 1-1/2 cups mashed potatoes -
5. 1/4 cups all-purpose flour -
6. 1/4 teaspoon salt -
7. 1/8 teaspoon pepper -
8. Dash hot pepper sauce, optional -
9. 1 tablespoon water -

How to cook deliciously - Mashed Potato Cakes

1. Stage

In a large skillet, saute onion in butter until tender. Remove from the heat. In a large bowl, lightly beat 1 egg. Add the onion, potatoes, flour, salt, pepper and, if desired, hot pepper sauce.

2. Stage

Shape into 4 patties; place on a greased baking sheet. Lightly beat remaining egg; stir in water. Brush over potato cakes. Bake at 375° for 20-25 minutes or until heated through.
