3. Ripe tomatoes, diced - 2
4. Red onion, diced - ½
5. Chopped fresh flat-leaf (Italian) parsley - ½ cup
6. Chopped fresh mint (Optional) - ¼ cup
7. Lemon, juiced - 1
8. Extra-virgin olive oil, or to taste - 2 tablespoons
9. Garlic, minced - 1 clove
10. Ground cumin - 1 teaspoon
11. Salt and fresh coarsely ground black pepper to taste - 1 teaspoon

1. Stage

Stir chickpeas, black beans, tomatoes, red onion, parsley, and mint together in a large bowl.

Whisk lemon juice, olive oil, garlic, cumin, salt, and ground pepper together in a bowl; pour over chickpea mixture and toss to coat. Cover and refrigerate salad until flavors blend, about 30 minutes.
