2. Diced onion 1 cup
3. Diced red bell pepper 1 cup
4. Garlic, minced 4 cloves
5. Chicken stock 1 (32 fluid ounce) container
6. Mixed greens (such as spinach, beet greens, and Swiss chard) 2 cups
7. Frozen corn ½ (12 ounce) package
8. Pearl barley 1 cup
9. Thinly sliced cremini mushrooms 1 cup
10. Peeled, thinly sliced carrot 1 cup

1 . Stage

Heat olive oil in a large saucepan over medium heat. Cook onion, bell pepper, and garlic in hot oil until softened, about 5 minutes.

Pour chicken broth over onion mixture; bring to a boil and reduce heat to medium low.
