2. Diced onion - 1 cup
3. Diced red bell pepper - 1 cup
4. Garlic, minced - 4 cloves
5. Chicken stock - 1 (32 fluid ounce) container
6. Mixed greens (such as spinach, beet greens, and Swiss chard) - 2 cups
7. Frozen corn - ½ (12 ounce) package
8. Pearl barley - 1 cup
9. Thinly sliced cremini mushrooms - 1 cup
10. Peeled, thinly sliced carrot - 1 cup

1. Stage

Heat olive oil in a large saucepan over medium heat. Cook onion, bell pepper, and garlic in hot oil until softened, about 5 minutes.

2. Stage

Pour chicken broth over onion mixture; bring to a boil and reduce heat to medium low.

Stir mixed greens, corn, pearl barley, cremini mushrooms, and carrot through the simmering stock.
