1. Crushed pineapple, undrained 1 (20 ounce) can
2. Instant vanilla pudding mix 1 (3.4 ounce) package
3. Orange extract, or more to taste ½ teaspoon
4. Red food coloring 2 drops
5. Frozen whipped topping (such as Cool Whip®), thawed 1 (8 ounce) tub
6. Miniature marshmallows (such as Kraft® Jet-Puffed) 1 cup
7. Chopped pecans, divided ½ cup

1 . Stage

Stir pineapple, pudding mix, and orange extract together in a bowl. Add food coloring and stir. Fold in whipped topping and mini marshmallows. Reserve 2 to 3 tablespoons of chopped pecans for topping; stir in remaining pecans.

2 . Stage

Top with reserved chopped pecans and chill for at least 1 hour in the refrigerator.
