Ingredients for - Perfect Lobster Bisque

1. Butter - 3 tablespoons
2. Chopped fresh mushrooms - ¼ cup
3. Chopped onion - 2 tablespoons
4. Chopped celery - 2 tablespoons
5. Chopped carrot - 2 tablespoons
6. Chicken broth - 1 (14.5 ounce) can
7. Salt - ⅛ teaspoon
8. Cayenne pepper - ⅛ teaspoon
9. Half-and-half - 1 ½ cups
10. Dry white wine - ½ cup
11. Cooked lump lobster meat - ½ pound

1. Stage

Melt butter in a large saucepan over medium-low heat. Add mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Dotdash Meredith Food Studios

4. Stage

Return to the saucepan, and stir in half-and-half, white wine, and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes. Dotdash Meredith Food Studios
