I always make kefir with Oursson's Orsik sourdough with selected milk, since I've been making it for a long time and I've come to the conclusion that it tastes better. I always make it overnight and in the morning I get the freshest sour milk product.

Pour the kefir into a bowl, put the sugar, baking soda and salt together. Wait for the reaction of the kefir to the baking soda, it will be extinguished in it. Prepare the ingredients we need for the pancakes. I will use mozzarella cheese for pizza, it melts very well. I used turkey ham for the pancakes.

Cut the ham into small cubes, grate the cheese on a medium grater. Break the eggs. Everything is sent to the kefir and combine.

Sift the flour. I had exactly 1 cup of 250 ml. Knead the dough.

Chop the tomato, peppers and herbs very finely. Place in the dough.

Mix everything thoroughly. The dough is ready for baking.

Pour oil into a frying pan, heat it up and with a tablespoon pour out the batter. My frying pan is D-24 cm. I placed 4 pancakes on it. It is necessary to put the pancakes with a distance, they grow in the process of frying. Fry on one side over medium heat.

Turn over, turn the heat down to minimum, cover the pancakes and fry until the other side is nicely colored.

This amount of dough made 20 pancakes. I fried them five times and poured a little oil each time. I took the fritters off on a paper towel to remove the excess oil.
