Ingredients for - Quinoa and Pepper Pilaf

1. Olive oil - 1 tablespoon
2. Shallot, minced - 1
3. Garlic, minced - 2 cloves
4. Red bell pepper, diced - 1 medium
5. Yellow bell pepper, diced - 1 medium
6. Uncooked quinoa, rinsed - 1 cup
7. Swanson® Certified Organic Vegetable Broth or Swanson® Vegetable Broth - 2 cups
8. Chopped fresh parsley - 2 tablespoons

How to cook deliciously - Quinoa and Pepper Pilaf

1. Stage

Heat oil in a 2-quart saucepan over medium-high heat. Add shallot and garlic and cook for 2 minutes, stirring occasionally. Add peppers and quinoa and cook for 2 minutes, stirring occasionally.

2. Stage

Stir in broth and heat to a boil. Reduce heat to low. Cover and cook for 20 minutes or until quinoa is tender and the liquid is absorbed. Stir in parsley. Season, if desired.
