1. Vegetable broth 2 cups
2. Quinoa 1 cup
3. Cucumber, chopped 1
4. Tomatoes, chopped 2
5. Fresh parsley, chopped ½ cup
6. Green onions, chopped 2
7. Chopped fresh mint 2 tablespoons
8. Garlic, minced 2 cloves
9. Olive oil ¼ cup
10. Lemon juice ¼ cup
11. Salt, or to taste ½ teaspoon

Bring broth and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 15 minutes.
