Ingredients for - Rabbit Fricassee Cuban-Style

1. Rabbit, cleaned and cut into pieces - 1 (3 pound)
2. Water - 2 ½ cups
3. Onion, chopped - 1 large
4. Garlic, chopped - 3 cloves
5. Green bell pepper, chopped - 1
6. Saffron powder - ¼ teaspoon
7. Ground cumin - 1 teaspoon
8. Salt, or to taste - 1 teaspoon
9. Black pepper - 1 teaspoon
10. Fresh lemon juice - 2 tablespoons
11. Bay leaf - 1
12. Tomato sauce - 1 (8 ounce) can
13. Potatoes, peeled and quartered - 1 pound
14. Dry white wine - ¼ cup
15. Capers, drained - ¼ cup
16. Raisins - 1 cup
17. Chopped green olives - ¼ cup
18. Olive oil - ¼ cup
19. Baby peas, drained - 1 (10 ounce) can

How to cook deliciously - Rabbit Fricassee Cuban-Style

1. Stage

Place the rabbit pieces in a deep skillet or Dutch oven over medium heat along with the onion, garlic, and green pepper. Season with saffron, cumin, salt, pepper, lemon juice and the bay leaf. Pour the water over all. Bring to a boil, then simmer for 20 minutes.

2. Stage

Add the potatoes, and cook for about 20 more minutes, until tender. Add the raisins, capers, white wine, tomato sauce, olives and olive oil. Simmer for about 5 more minutes. Finally, stir in the peas and remove from the heat.
