How to cook deliciously - Rumen baked with sour cream
1. Stage
Cooking time is given without taking into account cooking the rumen. You can boil the product in advance, divide it in portions and freeze it. Before cooking it will be enough to defrost in the microwave or throw in the boiling water for a few minutes. Nowadays you can buy poluta already cleaned, which facilitates the cooking, but some preparation before cooking is still necessary. Soak washed rumen in cold water for 2-3 hours, changing the water three times. If there is fat on the rumen, cut it off, we do not need it. Then pour cold water and put on the stove, boil - the water pour off, repeat three times. All these manipulations are needed to get rid of a specific smell. Pour the water for the last time, the volume should be not less than 2.5-3 liters, bring it to a boil, if there is foam - remove. But in my case there was no foam at all. We salt it like a usual broth, add pepper, bayroot, peeled onions, carrots and spices. Boil it for three hours at a slow boil. Let cool. Cut the boiled tripe into strips.

Peel the rest of the onion, cut into half rings and fry until transparent in butter.

Add strips of tripe to the onion, sprinkle with the mixture of peppers, fry everything until lightly browned. Sprinkle with flour, stir and pour in sour cream. Heat until thickened.

Transfer to a heatproof dish, sprinkle with grated cheese and place in the oven for 10 minutes.

Serve in the same dish in which it was baked.
