4. Hard-boiled eggs, diced - 3 large
5. Grated Gruyere cheese - 1 cup
6. Garlic, minced - 3 cloves
7. Low-calorie mayonnaise - ½ cup
8. Salt - ½ teaspoon

How to cook deliciously - Russian-Inspired Eggplant Salad

Heat olive oil in a frying pan over medium heat. Fry eggplant in the hot oil, stirring to prevent burning, until tender, 10 to 15 minutes.
