Ingredients for - Spanish Gazpacho

1. Tomatoes, peeled and halved - 2 pounds
2. Cucumber, peeled and sliced - 1
3. Green bell pepper, sliced - 1
4. Onion, sliced - ½
5. Red wine vinegar - 1 ½ tablespoons
6. Garlic - 1 clove
7. Salt to taste - 1 clove
8. Extra-virgin olive oil - ¼ cup
9. Cold water, or as needed - ¼ cup
10. Onion, chopped - ½
11. Green bell pepper, chopped - 1
12. Cucumber, chopped - 1

How to cook deliciously - Spanish Gazpacho

1. Stage

Combine tomatoes, cucumber, bell pepper, onion, vinegar, garlic, and salt in the bowl of a food processor; pulse until blended. Pour olive oil in slowly, with the processor running, until gazpacho is smooth. Add small amounts of cold water as needed to achieve desired consistency.

Serve gazpacho chilled with chopped onion, bell pepper, and cucumber sprinkled over each serving.
