2. Diced onion - 1 cup
3. Chopped mushrooms - 1 cup
4. Chopped carrots - ½ cup
5. Garlic, minced - 3 cloves
6. Vegetable broth - 4 cups
7. Water - 1 cup
8. Dry green lentils - 1 cup
9. Quinoa - ½ cup
10. Tomato paste - 2 tablespoons
11. Curry powder - 2 tablespoons
12. Ground red chile pepper - 1 tablespoon
13. Ground cumin - 1 tablespoon
14. Ground ginger - 1 tablespoon
15. Cayenne pepper - 1 teaspoon
16. Garam masala (Indian spice blend) - 1 teaspoon
17. Ground turmeric - 1 teaspoon
18. Salt, or to taste - 1 teaspoon
19. Ground black pepper, or to taste - 1 dash
20. Milk - ¼ cup
21. Butter - 1 tablespoon

How to cook deliciously - Spicy Lentil Quinoa Curry

1. Stage

Heat oil in a large saucepan over medium heat. Add onion; cook and stir until translucent, about 3 minutes. Mix in mushrooms, carrots, and garlic; cook until flavors combine, about 2 minutes.

Stir vegetable broth, water, lentils, quinoa, tomato paste, curry powder, chili powder, cumin, ginger, cayenne pepper, garam masala, turmeric, salt, and pepper into the saucepan. Reduce heat to medium-low and cover; let simmer until vegetables are cooked through, about 40 minutes.

Stir butter and cream into the saucepan. Replace the lid and cook until the lentils are tender, about 5 minutes.
