1. 2 cups mashed potatoes (with added milk and butter) -
2. 1/2 cup grated Parmesan cheese -
3. 1/2 cup shredded Swiss cheese -
4. 1 shallot, finely chopped -
5. 2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed -
6. 1 teaspoon minced fresh sage or 1/4 teaspoon dried sage leaves -
7. 1/2 teaspoon salt -
8. 1/4 teaspoon pepper -
9. 3 cups finely chopped cooked turkey -
10. 1 large egg -
11. 2 tablespoons water -
12. 1-1/4 cups panko bread crumbs -
13. Butter-flavored cooking spray -
14. Sour cream, optional -

How to cook deliciously - Turkey Croquettes

1. Stage

Preheat your air fryer to 350°F. In a large bowl, combine the mashed potatoes, cheeses, shallot, rosemary, sage, salt and pepper. Next, stir in the turkey. Combine everything together lightly but thoroughly. Shape the mixture into twelve 1-inch-thick patties, and set aside. Editor's Tip: Put the shaped patties in the refrigerator for 30 minutes or more. This will help the croquettes retain their shape while cooking.

In a shallow bowl, whisk together the egg and water. Place bread crumbs in another shallow bowl. Dip the croquettes in the egg mixture, then in the bread crumbs. Give each side a few pats to help the coating adhere.

Working in batches, place the croquettes in a single layer on the greased tray in your air-fryer basket, then spritz the croquettes with cooking spray. Cook until golden brown, four to five minutes. Flip the croquettes over, and spritz with cooking spray. Cook until golden brown, another four to five minutes. Serve turkey croquettes with sour cream or your favorite dipping sauce or gravy.
