Ingredients for - Vegetable Quiche

1. Vegetable oil - 1 teaspoon
2. Onion, chopped - 1
3. Green bell pepper, chopped - ½ large
4. Minced garlic - 2 teaspoons
5. Eggs, beaten - 3
6. Zucchini, peeled and grated - 1
7. Yellow squash, peeled and grated - 1
8. Carrot, grated - 1
9. Green onion, sliced - 1
10. Buttermilk baking mix - 1 cup
11. Shredded sharp Cheddar cheese - ½ cup
12. Vegetable oil - ¼ cup
13. Salt - 1 teaspoon
14. Italian seasoning - ¾ teaspoon
15. Paprika - ½ teaspoon
16. Red pepper flakes - ½ teaspoon
17. Ground black pepper to taste - ½ teaspoon
18. Shredded Cheddar cheese - ½ cup

How to cook deliciously - Vegetable Quiche

1. Stage

Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.

2. Stage

Heat 1 teaspoon vegetable oil in a skillet over medium heat; cook and stir onion, bell pepper, and garlic in hot oil until just tender, about 5 minutes. Transfer mixture to a large bowl.

3. Stage

Mix eggs, zucchini, yellow squash, carrot, green onion, baking mix, 1/2 cup Cheddar cheese, 1/4 cup vegetable oil, salt, Italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish and sprinkle with remaining 1/2 cup Cheddar cheese.

Bake in preheated oven until lightly browned, about 35 minutes.
