Ingredients for - Wild Rice Soup V

1. Uncooked wild rice - 1 cup
2. Butter - 1 tablespoon
3. Onion, chopped - 1
4. All-purpose flour - ¼ cup
5. Chicken broth - 1 quart
6. Carrots, shredded - 2 large
7. Cubed cooked ham - 3 cups
8. Milk - ½ cup
9. Chopped fresh parsley - 2 tablespoons
10. Sweet vermouth - ¼ cup

How to cook deliciously - Wild Rice Soup V

1. Stage

In a medium saucepan, boil rice in water 30 minutes. Drain, rinse, and set aside.

2. Stage

Meanwhile, in a large soup pot, melt butter over medium heat. Cook onion in butter until translucent. Stir in flour all at once to form a roux. Stir in broth, a little at a time, and cook until slightly thickened. Stir in carrots, ham, milk, parsley and reserved rice. Reduce heat and simmer 15 minutes.

3. Stage

Stir in vermouth and simmer 30 minutes more. Serve.
